No bake oatmeal energy bites are an easy, 5 ingredient, healthy treat to make. Satisfy that late afternoon hunger with these simple & delicious no bake energy bites made with wholesome steel cut oats, coconut, honey, peanut butter, and chocolate chips.

Steel Cut Oatmeal Energy Bites

THE RECIPE

INGREDIENTS

  • 1 cup quick steel cut oats
  • 1 cup shredded coconut sweetened or unsweetened
  • 1/2 cup creamy peanut butter
  • 1/3 cup mini chocolate chips
  • 1/3 cup honey



INSTRUCTIONS

  1. Combine all ingredients in a mixing bowl and stir together until combined.
  2. Using a small cookie scoop, or your hands, roll into 1" balls. Or smaller depending on what size you want. 
  3. These can be eaten right away or place in the fridge for about an hour.
  4. Store leftovers in the fridge.
